Late comment from Ontario, Canada. We have an exotic meat market close to me on a bison farm. We’ve had many exotic meats, ostrich, kangaroo, alligator as well as locally sourced bear, moose, venison, partridge, duck, goose, rabbit and bison. Very, very good. Alligator was delicious seasoned, grilled and topped with sweet chilli butter.

Had a teacher who cooked a little alligator for a class. Salt, pepper, sauteed in butter. It was fabulous! Even my friend who was a SUPER picky eater liked it.
