I Cooked Thanksgiving Turkey in 32 lb of Butter! I Did Not Expect This Result...

I put Turkey in simple brine overnight (salt, brown sugar, black peppercorns, bay leaves)
13 lb turkey
32 lb unsalted butter
7-8 shallots
1 lb peeled garlic
Rosemary/Thyme
Dan-O's Spicy Seasoning (Available at Walmart)
1 cup chicken stock (for injections)
Deep Fry time was 1 hour 15 minutes, until 155F inside. Rest time - 20 minutes. It was the best and juicy turkey I ever had. And I made garlic confit inside the turkey - best decision!

I saw something like this on Townsends, you know that 1700 cooking and homestead channel, but they melted the butter first and only took the clear part of it, and they called it boiling, apparently it can even make the stiffest meat soft and tender, perfect for when you have an older retired laying hen.

I feel like if you are using this much butter you might as well confit it at a lower temp then deep frying it - the seasoning also probably rubbed off from the turkey when it was submerged and it could’ve been more flavorful if you mixed it in with the garlic/shallot puree.
