the thing is with most exotic meats, you should cook them as locals use it. Sometimes the cooking process (or overcooking) gets rid of the unpleasant taste. As is the case with camel, it is realllly good braised until the point of drying out.. there is 0 barn flavor and a subtle nutty flavor (wich comes mainly from their fat) Camel Hump is enjoyed dried also wich enhances those nutty tones

The 1st time I tried groundhog it was fresh grilled same day. Super gamey, tough, and greasy. Next time it was soaked overnight in Salt water, rinsed thoroughly, soaked again for a 4 to 6 hours in buttermilk, rolled in seasoned flour and cornmeal, and deep-fried in a cast-iron pot over open flame. That was excellent and the only way I will fix it now.

Galapagos turtles went extinct because they were so delicious the explorers couldn't stop eating them. My guess is that you need to turn them into a stew or soup to get the best flavor out of them, as well as the best texture. Like brisket or another hard piece of beef.

Some of the sub-species are extinct, due to non-human hunting factors and competition from invasive species along with human interference. It's funny that the Chinese words for frog and chicken are so similar, seeing as how chicken is what people tell you frog legs taste like. That's probably why they gave the frog that name. In fact, based on what Max showed here, the Chinese word for frog IS the word for chicken, but with the word for rice paddy before it. Frog is, therefore, rice-paddy chicken according to the Chinese. That's appropriate and sort of comical, since a rice paddy is a great place for a frog to live.

And the characters they use in writing can be pronounced differently when used in different words. It's quite possible for them to have given frogs and chickens different names at first, and then just assigned characters that mean "rice paddy chicken" when deciding how to write the word "frog" based on it kinda tasting like chicken. Now, I don't know if this is what actually happened, as I don't speak any of the Chinese languages. I had to look up that character for "rice paddy" in a Japanese kanji textbook to know what it means. But I'd also like to point out that the Chinese people are not squeamish about eating pretty much anything they can get their hands on. The idea of them discovering a new animal, eating it, and then naming it based on what it tastes like and where you can find it, makes total sense to me. That's not unheard of in the West, either. We have a popular brand of canned tuna called Chicken of the Sea, for example. Not to mention Rocky Mountain oysters...

Being from Australia, you can buy over a pound of kangaroo from a supermarket for 10AUD which is about 6.50USD being cheaper than beef on most of occasions, so 300AUD for a pound is really crazy to me 🙂🙂

Paying 45 dollars a pound for axis deer is crazy to me... I can get a whole animal, for about 2 dollars US, and an afternoon of effort.😂 (two bucks for the rifle bullet I'll use) (I can get hunting permission with just a phone call and a thank you on the same ranch that Max went out on with Maui Nui venison. 😊 I manage a partner project with Ulapalakua ranch. )

I'm an Aussie. Kangaroo is really great! It's much more healthy than beef.... It lacks fat, that beef has, it's still an amazing protein and is very affordable. 💥💪 The tail is actually a delicacy.... As it has marrow.

Turtle meat varies from the very lean to the incredibly fatty Armadillo tastes like rodent and reptile combined. The best snake to eat is in Vietnam and they cook cobra down there in like spring rolls and sautéed with garlic and lemongrass and fried shallots
max about the camel in saudi arabia we put the meat in salted water for 3 hours at least then cook it in pressure cooker 😋 you should try it again but with a prepare properly

@@Krono626 like he literally said in the video, stewing and smoking are often used when a chef has to cover something up. "it's not fair to say the meat is bad, you can make a good meal out of it when you combine it with other things!!" is an outlandishly stupid take. if the meat doesn't taste good on its own, then the meat doesn't taste good. the only thing he did wrong is undercook a lot of it, because beef is EXTREMELY unique in being able to be safely eaten at anything less than well done.

Zebra is BY FAR some of the best meat I've ever had. I prepare it with yuzu pepper sauce and a squeeze of lime (30 mins). It's best rare, like tuna. Just a kiss of cast iron on each side.

I live in South Africa and ostrich is available in most supermarkets nowadays, it recently got a lot better due to better butchering and storage practices improving. Yes you cook it just like steak, medium/rare with a crunchy crust and its delicious, no gamey iron flavour or aftertaste at all! You need a better dealer😂
