The lore implication of the Nether Dragon would be extremely cool especially with you saying it was born from pure rage, and also collecting its power from it's surroundings, with it also having 3 heads. If we think that the dragons were once a race in the end and this Nether Dragon only appeared after the end portal is opened, that could mean the souls of dead and hunted dragons that were killed by the residents of the end cities would escape to the nether because of the soul power their and gain power to get revenge and form this amalgamation of dragons, rage, and the nether. Especially if we go with Matt Pat's theory about the player being a descendent of the builders who built every remain in the Minecraft world. Which would also make sense, following Matt Pat's theory, about the builders escaping to the end, hunting the dragons, and that's why the normal dragon and this nether dragon would attack us on site.

For the ice spike biome I would do some kind of ice/snow monster and it drops ice nails which you can craft into the ice hammer that can break almost anything and does 8 damage, but for the mushroom biome I would do a ghost mushroom that can make blocks disappear and it will drop ghost candy which can heal you 5 heart and give you night vision and nausea.

I actually have a suggestion for the health concept thing for the “Nether Dragon”, how about while it still has armor it obviously takes much less damage and it’s not harmful to the player but once the armor does break, it’s damage resistance is significantly decreased but it’s more dangerous to be next to because as you said, the lava is exposed so now being near it can cause you take damage or if you just hit and lava damage meaning you’d probably want really good armor, lots of heals and maybe some fire resistance

Custom enchantments I thought of for each boss: Burrowing: Allows you to burrow into the ground when you’re on two hearts or lower. This would give you regeneration but you will be forcefully thrown out of the ground. The higher level enchantment, (level III being maximum) the more health you recover, time you have before being kicked out, and hearts required to burrow. Retreating/Dashing: This would give you speed after being hit by a mob. The higher level enchantment, (level III being the maximum again) the higher level speed you get. Flame touch: This would set a mob on fire when you get hit by them. The higher level enchantment, (III being maximum YET AGAIN and it’s just because I think it would be too op if it was higher but anyway,) the more damage they would take from the fire damage.
