The best-known tomato sauce is probably much older than expected!
It is said that Ketchup comes from the Hokkien Chinese word ("kê-tsiap"), which could have meant a sauce made from fermented fish.
Fascinating, right? 😀
An ultimate Ketchup recipe is all about balanced flavor: We need the umami and the sweetness of the tomatos, which is why we have to properly proces them (by cooking them first in the oven). The acidity comes from vinegar, spices like allspice complete the sauce.
Ingredients I use:
- tomatoes (I use smaller ones, like Cherry and Roma)
- olive oil
- brown sugar
- red onion
- cayenne pepper
- wine vinegar
- basil
- bay leafs
- black pepper
- allspice
- optional: coriander seeds
- salt to taste
Cut the tomatoes into quarters, drizzle with olive oil, add brown sugar and salt. Cook in the oven for about 30 min at 180°C, now the tomatoes will have an intense umami flavor and are slightly caramelized! Meanwhile cut the onion and garlic, sauté them until translucent. Add the cooked tomatoes, cayenne, bay leafs and the spices (black pepper, allspice, coriander seeds). Salt to taste, bring to the boil and simmer gently until the sauce reduces (about 30 min).
Finally add basil, mix until desired texture, and add wine vinegar and continue to simmer until it thickens to the consistency of tomato ketchup.
Now correct the seasoning as desired, and fill it in a sterilized glass bottle.
Place in a cool place or enjoy right away!
