Most gladiator battles weren't to the death as gladiators were expensive to train. Battles to the death would have been more common among captured slaves who were simply thrown into the arena together.

Plus towards the end of the Republic (I believe) gladiators were becoming more of a positive thing and entire schools were built to train gladiators. Even more of a reason why they weren't killed. The Romans probably saw gladiators like we see celebrities or KZbinrs.

No real need to put any money into max health. IF they get all the way to your base, chances are, you are not winning anyway. So it is better to save money and just keep upgrading food production until you can unlock and evolve.
