My favourite method of trolling other players is making them fall into the water at the pier by jumping up with cars like scramjet or going passive mode the last second before they hit you with their cars. My friend and I love to troll people with the money truck. You can buy it off of Warstock if you don't have it already. So, what we do is is that that we'll both get in the money truck and then go ghost organization/bribe authorities then when we get close to someone we'll drive like an NPC to see if rather or not if they fall for it and if they do we kill them lmao.
