Trolls are very easy there attacks are big and open, you stand next to it wait for an attack, roll in(avoiding the attack) and you just wear em down like that

I just started doing this in a wooded area so that the troll's swings will hopefully damage the trees. It ends up knocking some of them down or weakening them so it takes much less time to chop them down once the troll is dead.

Hit undetected to get sneak attack bonus, use shield to stun the thing and finish him using spear.. that'll do the trick

If you roll when any enemy attacks you won’t get any dmg. Btw I would always try to headshot the trolls

For trolls without logs literally just dodge forward every attack. For trolls with logs the swing attack dodge forward and the slam attack dodge left.

Build a bronze buckler, you can parry them very easily with it. The wooden roundshield takes damage from their attacks, a parry on a bronze buckler only takes some damage from an overhead swing
