If you want them to grow to full height, it takes a few months, but then there's nothing to do with them, other than harvest their seeds. They don't live a very long life either. From planting to harvesting/dying, you're going to get around 4 months total. If they aren't being grown for seeds, people eat the microgreens, which only take a few days to grow and are done indoors without soil, just water. If she puts them on something outdoors to treat it as art, they won't thrive and will quickly die off as well. As much as this is a great idea, there are much better options for outdoor use. When I worked on a farm, a lot of our plants we started in the grow rooms that didn't get planted, we donated. We also donated seeds. A lot of urban farms/gardens love those donations and then they can grow more food for people in the area who don't have fresh produce or can't afford it.

I still think it would be great as an art installation involving kids, learning to grow things and learning the lifecycle at the same time is also very important. Much better than some parents I’ve known who deliberately bought mice to teach about lifecycles and ended up either releasing them or killing them 😳

Maybe try to lay a tarp or something over the seeds when they are newly planted, that way it stays moist for longer. Maybe something in plastic that doesnt stick to the seeds.
