I've been using the 20% fat mince since it changed to the vacuum pack and I find if I brown the whole block for a few minutes both sides it then cuts up quite well with a flat bladed spatula. What I have noticed, however, is when I make meatballs with it, how much gristle and sinew is in it. Tiny chopped up bits of gristle, way more than there used to be. It almost resembles mechanically separated meat which, of course, it can't be because that's illegal.

Just tried cooking this and straight away i regretted it. You can tell that the mince was pumped with extra water whilst cooking it. The cooking time definitely was longer too and to get it to brown was difficult due to the liquid content oozing out. Also the texture of the mince meat when cooked is all wrong, i dont know what your thoughts are but it was like there was no structure and was mushy inside. I wont be buying any vaccumn meat from sainsburys again!

I agree this reminds me of the lowest quality mince you can buy in the US where food standards allow more water and salts added to minced beef. Sainsbury’s needs to reverse this change. I no longer buy mince from them and actually use other supermarkets to avoid this product.

I bought this mince for the first time yesterday and cooked when I got home. In my opinion it was good. It more ground therefore less wormy like it usually is. for me it was more like the mince you would get at a restaurant and tasted good. Also there is a point to it. it reduces in the amount of plastic used for the packaging prosses. And unfortunately for anyone who doesn't like this new way of packaging meat, other supermarkets are following suit.
@BadFoodBlog Жыл бұрын
The issue is you could use cardboard and cellulose based plastic dry mince is less weight per kilogram of meat solids. This packaging introduces a lot of water so the weight of meat is artificially inflated adding salt and nitrites to stabilise and extend the shelf life. The risk with a sealed packaging like this is higher from anaerobic bacteria which is why it will need additional chemicals to protect the consumer this is about extending shelf life not packaging.

They vacuum pack it so it will retain that red color from the myoglobin in the meat which quickly changes from bright red to grayish brown upon exposure to air. There could be a gas inserted during the vacuum sealing process that might inhibit the color change as well. It's important to note that just because a beef product has changed color this does not mean that it is spoiled, will make you sick or will even taste different after it is cooked. But nobody is going to buy it from the store if it's not a nice red color. I don't know what the law is in the UK but here in the USA huge national grocery chains, most notably Wal-Mart, treat their beef products with chemicals and gasses that can 'pink up' beef or stop whole steaks and roasts from getting that grey color over its exposed area. We do have ground beef that can be purchased in tubes of 1 to 10 pounds which are often called 'chubs' and are generally lower quality meat intended to be cheap to serve a crowd. I don't know exactly why it happens but this tubed ground beef seems to act exactly like this example y'all were cooking in that it is really hard to brown in a skillet correctly or break it up as it cooks.
