What's the reasoning for going for Aerial Ace instead of Flame Charge if you also wanted to play Fly?

I guess it's a way to play "safe". Aerial Ace makes characters with non-sure-hit moves struggle.(Chandelure's Flamethrower, Urshifu's strike). Also heals you a bit. Can be good for Talonflame ult, since Ace will teleport you behind target.
