Not only are they incredibly stressed regardless, the way the water chemistry works is that the seal on the plastic bags don't allow for the CO2 the fish produce to off gas. Why that's important is because CO2 will lower the PH in the water and turn the ammonia the fish make into the less harmful ammonium. Without that seal the CO2 off gasses and the ammonia remains the same giving the fish ammonia poisoning.

There's a lot difference with a plastic bag filled with oxygen and this that makes this unviable. The way fish are shipped is with an air tight plastic bag filled with just oxygen. The immediate benefit is that the fish has access to more oxygen than the air but another is that fishes create CO2. The reason that's important is that CO2 lowers the PH of the water and allows for the ammonia to turn into ammonium which is slightly less harmful. Without the seal however, the CO2 off gasses and the ammonium can turn into harmful ammonia which can kill the fish. Couple that with the fact that he chose goldfish which are notoriously messy fish. Even with the sealed plastic bags, at the very maximum they can only stay in them for approximately 72 hours. It is also why it is recommended to no longer acclimatize your fish if the shipping took longer than a day, since you risk killing them with ammonia poisoning. On top of that, the fishes are still stressed during shipment due to the constant movement. That's why you might receive them with less color. That's due to the stress of getting thrashed around. Doing this is like torturing the fish for your own amusement. There's a lot more I could get into tbh but the gist of it is the water chemistry is not ideal and this is stressful for the fish.
