Today I will show you Very Old Authentic Famous. Bengali Sweet Padma Luchi.It used to be one of the old most Famous Bengali Sweet recipes.
Ingredients of Padma Luchi:
2 cups All Purpose Flour
1/2 tsp Salt
1/2 tsp Baking Soda
1 tbsp. Sugar
Refined Oil
200 gm Khoya Kheer/Mawa
1/2 cup Powder Sugar
1/2 tsp Cardamom Powder
Cashew Nuts & Raisins
Methods of how to make Poddo Luchi:
1. At first take a bowl and add 2 cups All Purpose Flour/Maida,1/2 tsp Salt, 1/2 tsp Baking Soda, 1 tbsp. Sugar, 2 tbsp. Refined Oil. Mix it.
2. Add 1/2 cup Water slowly to make a smooth hard dough.
3. Cover and let it rest for 20-30 mins, meanwhile make the stuffing.
4. Grate 200 gm Khoya Kheer/Mawa.
5. Heat up a pan and add 1 tbsp. Ghee.
6. Let the ghee melt and add Grated Khoya Kheer/Mawa,1/2 cup Powder Sugar.Cook on medium to low flame while stirring continuously.
7. When the Mawa melts add Chopped Cashew Nuts & Raisins, 1/2 tsp Cardamom Powder.
8. Cook on medium to low flame while stirring continuously.
9. It took about 3-4 mins to make the stuffing.
10. Turn off your oven and let it cool down in a separate plate.
11. For sugar syrup add 1.5 cup Sugar and 1.5 cup Water in a pan.
12. Boil on high flame till the sugar melts.
13. After sugar melts add 1/2 tsp Cardamom Powder and boil for 10 mins on medium to high flame.
14. After 10 mins turn off your oven, cover and let it rest.
15. Cut puri size lechi from the dough.
16. Take a lechi and roll out like a puri.
17. Put it aside and roll another one, you will need 2 puri for 1 Padma Luchi.
18. After rolling 2nd puri, put little bit stuffing in the middle .
19. Grease water with your fingers around the edges, it will act as a glue.
20. Now put the other puri on top and seal the edges properly.
21. Fold the sides and make a Lotus like shape.
22. Heat up Refined Oil in a pan.
23. When the oil heats up fry the Padma Luchi on medium to low flame. After 2 mins flip them.
24. Flip every 2 mins and fry on all sides till Golden Brown.
25. Take them out of the oil and put them in the sugar syrup.
26. Let them soak in sugar syrup for 20-30 mins and then serve.
