i delay my morning coffee for about an hour too as i probably read the same research as you that coffee blocks cortisol excretion (or something like that) and your body is busy for the first 30-60 minutes in the morning getting rid of all the cortisol and if you drink coffee immediately it messes up the process. I probably butchered that explanation lol.

Coffee was traditionally grown in the shaded understory of the rainforest. The conversion of cocoa and coffee production to sun-grown plants of late is a major source of rainforest deforestation. The forest is cleared to make room for the coffee and cocoa plants. According to some estimates, every cup of coffee consumed destroys roughly one square inch of rainforest, making sun grown coffee a leading cause of rainforest destruction. So when purchasing coffee to drink or buying beans please buy only coffee marked as shade grown. You will find that shade coffee which is slower to ripen, often provides a more complex taste and is more flavorful than other coffees.
