The key to gettting a basic cobblestone generator to working is on the water side make a hole that’s 2 blocks deep and to cover the lava

If I was to make a custom biome it would be something that resembles the Alpha and Beta terrain generation; with the usual brokenness they are known for May not be the prettiest block-wise but it would look pretty cool and serve as a nice throwback to those times (or what some would say: The good old days)
