I know this is a year too late, but a nice tip for future-proofing animal pens... if you place a carpet on top of a fence, you can jump through and onto the carpet to get in and out of the pen, but the animals can't get out.

use carpet ontop of the fence to allow you to jump ontop of the fence while the entities still think they cant jump over it. Also, to solve your sheep problem, kill any skewed sheep, keep the gray ones, breed the gray ones with the white ones, and some of the children may also be white. (only useful if you only have on white sheep though)
