I have to say, as a Texan this looks delicious!!!! For us, we use chili, garlic, onion, cayenne, and mexican oregano powder in the seasoning. We typically use sharp shedded cheddar cheese. For garnish, fresh cilantro, green onion, jalapeño peppers, tomatoes, avocado, iceberg lettuce, and salsa. Even here, the variations are endless. I’ll say that fresh-chopped cilantro takes it to a whole other level. It’s an herb similar to parsley.

At the end when he said coriander, he meant cilantro. They call the whole thing coriander, while we use cilantro for the greenery.

I made yesterday with a few adjustments - instead of the camp fire I used an old car that was on fire beside my estate. I changed the following ingredients and it was epic: nacho chips for some crab claws Seasoning for some organic carpark floor dust. (Its in season now) Pork mince for cabbage Sauce I used a mix of tree sap, badger tears and liquidized pigeon feet Everything else was the same except I cooked it all inside the burning tire of the car on fire - the residual heat was more than enough to cook the cabbage through and also add some additional smoky flavor. Can't wait to try and emulate your next recipe.

Looks great chef. Mexican here, I use only fresco cheese on my nachos but I’m not sure if you can find it in Australia. However a mix of fresco and a melting cheese may be a good combination. Thank you for sharing your recipe.

This is the reason I make nachos at home instead of buying them at restaurants. They never layer them so once you get past the top layer there's almost nothing left but chips!

As a chef/student myself, I properly appreciate the effort you take into translating something that seems natural to you into a format that's digestible for anyone (I don't go camping much but fuck me I'm taking a dutch oven next time). Helps that you're such a lovely guy too! Side note: love the long-form content, have been watching since the beginning, and I really wanna learn more from you so don't be afraid to add some brief extra complexity/detail if it fits (e.g., why basil works here over coriander - even if it's just your opinion, it's an experienced opinion and much appreciatied)
