That spot is called a “hollow heart.” This happens when weather is erratic during growing season, causing fast and slow growth, the potato flesh did not adapt well to it during growth. This is more common in white potatoes (Idaho, russet, etc) as their flesh is more porous than say Yukon potatoes or red potatoes which have an even denser and thus less porous flesh. The potato is still safe to eat, just simply remove the hollow heart as you would an eye (which Julien does in the video).

Fun fact: The brown stuff in the middle of the potato is called “hollow heart”. It happens when there’s a sudden change in the growth process. It usually happens when the potato isn’t getting enough water and then suddenly gets too much.

Someone from Germany here: My grandpa always made vegetarian Vienna Schnitzel from celery root. It's nothing new. I think it was something to save money as meat was expensive in my grandpa's childhood. It tastes so goooood!

@@kristidunlap it a fairly common meat substitute here in Germany. Just boil it until it is soft, bread it and fry it. Thats the secret. It's really easy. If you like you can cook it in a broth or add different spices to the water. You can be creative. In the end you just treat it like meat with the frying

In Scandinavia, the root is called celery, the leafy stalks are leaf-celery. We eat the root more than the stalks.
