I'm told that fish sauce is one of those "secret weapon" type ingredients for homemade ketchup, and also that a little goes a long way.

Interesting! I believe it! I tried to stick pretty close to the script on this one since the last time went... not so well... but I think, having now successfully done it once, I'd definitely start playing around with the flavorings for the next time!

❤️🍅👶🏿👶🏾👶🏽👶🏼👶🏻🍅❤️ I suggest a Mouli as a future gift. Much better than Marrying Mr Darcy which is pure evil! LOL. A Mouli liquidises and removes the seeds and skin of tomatoes in one go. It’s the secret tool of the best Nonna Passata ever. It also makes the best mashed potato if you don’t have a ricer. Trying to push anything through a tamis or fine sieve other than flour is the way to insanity! 😂 💗❤️🧡💛💚💙💜🖤🤍🤎

A thought from my garden pasta sauce sessions -- if you simmer the puree until it stops foaming up and THEN sieve the result, a lot of the solids become liquids. All you have left to remove are the seeds and a little skin. Plus you get the umami from the "goo" around the seeds. And, hail to the Ketchup Queen!

Emily, I know your pain! I've made ketchup before. I went through a summer when I decided I was going to try making my own condiments. Things I am great at: pickles, relishes, chutneys, mayonnaise, and even mustard. Things that are hard to replicate: ketchup. An entire summer testing recipes and tweaking ingredients for the perfect umami balance. I ended up back with government ketchup. I hope you have better luck than I did!

Woohoo! It looks pretty good. I bet you could add some tomato paste to make it a bit thicker, if you wanted. Way to go for sticking with it. Seems like now that you have a process that works, you can tweak the seasonings to make it the "Emily Special"!

My thoughts exactly on the flavorings! And I stubbornly wanted to do this without any premade tomato products, but you’d be right that using premade paste would probably make a positive difference 😂

@@EmilyDuncan Probably worth doing once from scratch, but in the future, canned tomatoes and tomato paste are actually fantastic products. BTW, food mills are terrific tools for doing the puree/remove seeds and skins thing from tomatoes, but maybe not very NYC-sized-kitchen friendly.

I wouldn't skimp on the vinegar... That said, it looks like Ketchup, and a way easier to follow recipie than most on KZbin.

It’s definitely doable! Going to keep finessing the balance of flavors, but that also comes down to personal taste. I overshot the sugar so I added a little more vinegar and ended up finding my final result a little overly tart and overly sweet (I mean, still pretty good in the grand scheme of things, but I felt like I lost out on some of the tomato flavor). Would probably also benefit from better ripe summer tomatoes instead of sad grocery store winter tomatoes, haha, but we work with what we’ve got!

I think the vingar and sugar in it is gonna depend on what tomatoes you use along with the quality of them. This isn't really the time of year to find good tomatoes. Most of what you find are greenhouse grown and normally bland.

Yeah, I read a thing that said winter tomatoes were actually fine for ketchup, but would love to try it again with a more flavorful bunch 🍅

@@EmilyDuncan I have pretty good luck with the Roma tomatoes at the supermarket this time of year. I use them for salads and cooking when I need a fresh tomato.

I recommend it! Even if it’s only as good as what you get at the grocery store, you learn a lot haha. Just start small with the flavorings then taste and build til you like it!

TRUST THE PROCESS! (Also, trust the food processor.) I was surprised the recipe wanted you to add additional water to such juicy beasts as tomatoes, but maybe that was to help you get it through the strainer.

An easy way to get the skin off of tomatoes is to blanche them. You put them in boiling water for 15 seconds and then the skin should come off. Then use an immersion blender with some water to blend them up. Then add the rest of the ingredients.
