So Merle does what almost no other vegan/ vegetarian cooks do... and that is give credit to their source. Sadly, so many will tweak a recipe, even so little as to change a half teaspoon of something to a full teaspoon. And I am certain that so many Merle fans, like myself, know who those others are. In Indonesia there's a dish called gudeg, it's not vegan but in it, there's a side dish made out of jackfruit and sometimes I mistook it for shredded chicken.

there's actually more like the empal which is fried slightly dehydrated beef? it's hard to say, and eggs, but the jackfruit side dish itself is good on it's own! Usually if you prefer to be vegan, you can replace the meat and egg with fried tofu and tempe which is literally the go to budget food in Indo :') Hot steaming rice, deepfried tofu, deepfried tempe, and chili sauce. (this is chili, Indonesian shallot (because truthfully, Indonesian shallot is spicier than western shallot), garlic, and some other spices that depends on each family). And maybe sweet soy sauce (kecap manis).

One thing you should know : the jackfruit we use is the unripe/young one. If you have the real unripe jackfruit, make sure to clean the sap/latex before cooking it. Before chopping, apply oil to the knife. Chop the unripe jackfruit and boil it for 5 mins. It will reducing the sap and soften the young jackfruit meat. After that, you can use it to cook various meals. (Sorry, english is not my first language, so hopefully you understand)

That (young, green) jackfruit ("Native Forest" brand) -- is never sweet. It's a bit sour -- because it is preserved in lime water. However -- you can buy mature, ripe jackfruit that is preserved in sugar water from asian grocery stores used as a desert.

I’ve made this a few times and it needs more seasoning when you mix it up with nutritional yeast and protein powder with the methalcellulose, so now I add more flavoring and seasoning. For the sticks, I bought a dowel from hardware store and cut it into 5-6” pieces. It does get brown from repeatedly using them in the air fryer. I just clean them well, dry and store in a baggie. Cheap to replace too.

My family isnt vegan, but we often use jackfruit as a chicken substitute. We prepare it like chicken basically. I was often given jackfruit as a child in an attempt to fool me into thinking it was chicken lol. It never worked though cause...its jackfruit.

Now I’m going down the rabbit hole of research papers seeing if I can use sunflower lecithin instead of methyl cellulose. Initially, because I HAVE sunflower lecithin already, but now upon reading I’m seeing that lecithin is way less harsh on your gut microbiome than methyl cellulose is. CONTINUING DOWN THE HOLE I GO! 🤓

Okay so I didn’t find anything specifically on if sunflower lecithin works in place of methyl cellulose (but that they are both emulsifiers), but I found plenty of articles stating that sunflower lecithin is either non-consequential or even helpful for our bodies in some articles, and all articles stating methyl cellulose ain’t that great for ya. Not putting this out to say you should do this that or the other, just taking y’all on my lil research journey with me… guess I’ll have to try this recipe with sunflower lecithin and report back on how it goes!
