Ah, this video is so exciting! Enjoy 20 minutes of me trying to recreate fancy foods from the Netflix series Bridgerton, seasons 1 and 2. I had so much fun with this!
I made savory pies for the time ever, tried cozy chai and lemonade slushies, sweet lemon tea cakes and delicious gooseberry sugar cookies. Which series should I cover next?

INGREDIENTS & NOTES
#1 Kate’s Tea
3-5 cardamom pods
1 tsp whole cloves
1 teaspoon black tea leaves (i used Assam)
~ ¾ cup water (180ml)
1-2 tsp brown sugar
~ ¼ cup non dairy milk (60ml)
→ serves 1

#2 Daphne’s Pies
for the dough:
300g all purpose flour (2 ½ cups)
1 tbsp cornstarch
160ml (⅔ cup) water
150g vegan butter (⅔ cup or 5.29 oz)
¾ tsp salt
pinch of nutmeg
dash of pepper
PLUS:
1-3 more tsp of cornstarch to work into the dough when kneading it for the first time
about 1 tbsp flour sprinkled over your surface when kneading it for the second time, after the dough has been in the fridge for 2 hours
for the filling:
1 onion
2 cloves garlic
450g - 500g cremini mushrooms (16 - 17.6 oz), chopped into small cubes
1 tbsp vegan butter
¼ cup white wine (60ml) (sub w 2 tbsp soy sauce or 2 tbsp worcestershire sauce)
200g frozen kale (or spinach), defrosted (or pretty much defrosted)
¼ cup vegan cream (60ml)
lots of salt and pepper to taste !
optional but recommended: ½ tsp lemon zest + 1 tbsp lemon juice
→ yields 4 pies
→ use 4 small to medium pie pans or ramekins (10 - 15 cm, 4 - 6 inch)
→ serve w vegan gravy, bbq sauce, tahini, hummus, fresh veggies

#3 The Young Ladies’ Lemonade Slushies
½ tsp to 1 tsp lemon zest
45 ml fresh lemon juice (¼ cup minus 1 tbsp , or juice of 1-2 lemons)
2 tbsp agave syrup
8 - 12 ice cubes
if needed: a splash of water to help blending
1-2 handfuls fresh berries
optional: edible flours for decorating
→ yields 2-3 glasses
#4 Lemon Wedding Tea Cakes
use a small baking sheet around 29 x 33 cm in size (11 x 13 inch)
for the cake:
150 sugar (¾ cup)
125ml vegetable oil (½ cup)
3 tbsp applesauce
zest of 1 lemon
3 tbsp lemon juice
1 tsp vanilla
(250ml) non-dairy milk
360g all-purpose or spelt flour (3 cups)
3 tsp baking powder
¾ tsp salt
if needed: 2-3 tbsp water if the batter feels a little thick
I tried following this fondant recipe:
• No Gelatin No Agar Aga...
Would recommend this frosting idea here:
100g cashews, boiled for 30 min (3,5 oz = 2/3 cup)
1 Tbsp vegan butter or coconut oil
60 ml + 1 Tbsp full fat coconut milk (1/4 cup + 1 Tbsp)
2-3 Tbsp maple syrup (or more if you like)
1/2 tsp vanilla
pinch of salt
→ blend up everything until smooth! either tamp down the ingredients as you’re blending in a blender, or scrape down the sides a few times when using a food processor
also: berries and baking decor of choice for serving
#5 Jam Sandwich Cookies
100g vegan butter at room temp! (3.5 oz or ½ cup minus 1 tbsp)
1 tsp vanilla or a few drops vanilla aroma
35g apple sauce (2 heaping tbsp)
75g sugar (⅓ cup plus 1 tbsp)
180g flour (1 ½ cups)
generous pinch of salt
PLUS: 1 - 2 tbsp cornstarch for the surface (add enough until the dough is no longer super sticky, but feels easy to work with)
a little flour to cover the rolling pin in just before rolling
I used an 8 cm donut cutter ; you can use a glass around the same size and then a smaller round cutout, 2 - 3 cm in size, maybe the top of a glass bottle, or go in with a knife to create the cut outs!
Remember, only half the cookies need a cutout
6 heaping tsp gooseberry jam, or any other jam you prefer
a little powdered sugar for serving
→ yields around 12 cookies, around 6 large sandwiches

I love how she had tulips in the background the whole video!! Not sure if it was intentional but it reminded me of when Daphne's mom is embroidering tulips for her because they symbolize "passion" *Spoiler for S2 ahead* It's also very fitting since Anthony gives Kate tulips to symbolize his love for her.

Hi Mina, I'm not personally a vegan but have been making so many of your recipes that I thought I'd share something I have been making a lot recently! (this makes around two or three servings) CHOCOLATE CHIA SEED 'MOUSSE' INGREDIENTS: 4tbsp chia seeds 2tbsp cocoa powder 3-4tbsp maple syrup (or sweetener of your choice - add more/less depending on your preference) 200ml of soy/oat or another plant-based milk (add more/less to adjust the consistency) HOW TO MAKE: 1. Blend the chia seeds until you have a fine powder (make sure the blender is before blending so the chia doesn't stick!). 2. Combine everything else using the blender. 3. Add some optional toppings like berries, granola, or chocolate chips and you're done! It can be eaten straight away since the the consistency should be quite thick if done correctly, but it can be refrigerated :)

If you plan on working with fondant soon again Mina, you could try marshmallow fondant istead with vegan mallows, it may be fitting for you to work with

I second this suggestion! The vegan mallows melt well, and you mix it with cornstarch and extra vegan butter to add the elasticity and stability against the icing sugar 👍👍

I love it that you took Bridgerton for a topic this time! I'm completely madly in love with the series tbh I absolutely love the foods, they look gorgeous. It was so nice to listen to this video while designing my own Bridgerton inspired cork board for a wall, though I must say I was distracted and needed to look at the visuals quite often

I love this! And I love that you tried to sorta match your outfits with the era 😄And for the fondant, that's actually an awfully complicated recipe. I've tried one consisted on a very concentrated syrup (sugar + water + glucose) which, when reached a certain temp, you remove it from heat and start pounding it until it's cold and reaches the "gummy" state.

LOVE this! I am a lover of "fancier" cooking, historical recipes, and the whole aesthetic of afternoon tea menus, but finding doable vegan recipes for those sorts of foods can be so difficult! This was lovely and you obviously put loads of time and effort into it!!! Much love! ❤

Hey, I loved this video! I live in Hungary and we have a very similar dessert to the sugar cookies, called linzer. It was created after the 1848 revolution and named after a lieutenant. Grandmas make it very often, usually with peach jam. 😊

ooohh, those lemon cakes are so cute. I think vegan marzipan would be so good on them. It's also a bit easier and more affordable to make than fondant, although it's pain in the a to roll it out 🥰

Great snack/ appetizer / side dish idea: Cut a washed and DRIED cauliflower into florets. ( The pieces of cauliflower must be completely dry or else the toppings will clump and turn into mush!!!). Coat the florets with a mixture of peanut butter, olive oil, salt and pepper ( every piece must have a thin layer of your oily dressing). The final step is to coat your now oily pieces of cauliflower in nutritional yeast. If you want more flavour you can also add some garlic and tomato flakes. I like to add some Hungarian vegetable soup powder. Please let me know if you made this and liked it. Enjoy!

Hey Mina, i have a healthy pb souffle recipe for you😊 ~Ingredients: 5 tbsp of oats 200 ml of milk (any kind you want) 1 tbsp ofcacao powder 3 tbsp of molasses Some pb 10 grams of baking powder ~How to make it: • Grind the oats (you can just use oat flour as well) • Mix all of the ingredients except pb • Pour the mixture into a ramekin till it covers the bottom • Add a tbsp of pb to the middle of the ramekin then pour the rest of the mixture • Bake it in a 200°C degree preheated oven for 10 minutes (Check it if it's done once in a while) Bon appetit! This recipe is a friend of mine and i'd be so happy if you tried it💕Plus you can use up the leftover molasses from before this way. Anyways, you really inspire me, i love you💌💌

Hey Mina. First of all - nice video! I enjoyed it very much, like every of your videos tbh 😊 I have to say that i like these type of videos the most, where you recreate food from series or movies. And recently i have read a comment under one of your videos in which someone suggested a Studio Ghibli themed video and i absolutely live for this idea!! Yes! You will get more than 4 out of this dough then, and they might not need to bake as long, start with 25 min maybe, I’m guessing it’s 30 min for muffins but give it a try ☀️
