My theory is that the enemy tracker doesn't work, because it only tracks normal zombies, maybe if you put a name tag on everyone that says "Enemy" and you track the names instead of the mobs it will work

you can have a repeating command block that tracks if the game score enemies goes to zero or less and when it does start the next wave you can also have a deaths scoreboard that auto stops, and then a trigger command to start the game... I know what I'm saying sounds pretty complicated but in reality it's pretty simple to do

Or to remake the map you can place down some command blocks wich places saplings to the given points of the map and then another command block increases the random tickspeed. (So the trees quickly grow up) then set back to 3. Also if you don't want that the player can build a tower and easily kill the enemies, you can type thos command to the repeating command block: fill [area corner cordinets] [area corner cordinets] minecraft:air replace minecraft:barrier The barrier layer I think is the best 4 blocks above ground, so the player can jump and build bases.

The scoreboard zombie/wave tracker will need the command “scoreboard players set Enemies Game 0” in a repeating command block and the command “execute as @e[type=!player] run scoreboard players add Enemies Game 1” in a chain command block after that repeating command block. To ensure that the slime wouldn’t spawn, you can set gamerule “doMobSpawning” to false and your wave system can be setup by in a repeating command block put “execute if score Enemies Game matches 0 run scoreboard players add Wave Game 1” then add anywhere a repeating command block set to conditional with command “execute if score Wave Game matches ” and after that add a chain command block set to conditional with any command you want. To add more waves, repeat the repeating command block, chain conditional command block setup. Edit: also Ima make you a map just for you with a datapack version of this

i have an idea, you take the idea of your game but add more weapons that change the gameplay completely, and you start with an pistol but as you play the game you get into a gameplay type like you run from zombies then you attack them once in a while, then an ai will see how you play the game and will give you upgrades that fit into your gameplay, like if you attack once in a while then it will give you an upgrade tham makes it load more time and you can use it once in maybe 15 seconds but it does crazy damage, and then also there will be tons of diffrent upgrades so you will never get the same weapon even if you play the same because it has so much that if you even change a little bit of your gameplay style then you will get a diffrent weapon, its a cool idea that i think with hard work can be super good, so please if you read this comment try this (also i want credit if this will be a video).

This is REALLY complex, needs a lot of work too especially for a one man indie dev, problably a simpler version of this would be REALLY cool though. Maybe a system of a tree which makes it to where you kill a certain amount of enemies, and then one of the different styles is tracked like if the player attacks every couple of seconds instead of a lot then they get the rocket launcher, or if they do that and seem to stay back and attack enemies with powerful shots (Like headshots) they get a sniper, maybe this needs a bit of changing too, but thats the fun of these ideas.
