I was in Chaing Mei about 8 days ago. It's empty, as it's the low season. It was over 100 a couple of days. Later went to Pai, full of foreign tourist. Later went to Chiang Rai, very quiet and saw very few tourist.

Nice video, Andy. For the sticky rice, I believe you have to eat it with your fingers, not the fork, and probably leave it in the plastic bag inside the little basket. Is this your first visit to Thailand? Enjoy your trip :)
