12:38 Tina, most restaurants don't use fresh mangoes for mango lassi. They use canned purée and that's why it's probably different. I prefer the fresh version though because it doesn't have as much added sugar.

Also when ever you're cooking any Indian dish make sure to put all the "Khara masala" like clove, cinnamon sticks etc all together right at the beginning after the oil or butter or ghee whatever you're using heats up properly and then add the onions, ginger, and garlic whatever applicable and fry them properly before adding the other ingredients, wherever you follow such a recipe. This adds in significant flavour to the recipe ♥️
@elithluxe75685 ай бұрын
My mom does onion and then ginger garlic and finally the cloves, cinnamon (whole and powders) and chili powder
@RonBhattacharya9 күн бұрын
@@elithluxe7568: That’d be useless, TBH. We add the whole spices in hot oil in the beginning to ‘temper’ the oil.
@elithluxe75689 күн бұрын
@@RonBhattacharya not really. I’ve tried both and I definitely prefer the way she does it. Also cause she cooks it for a long time like more than hr to get everything really well incorporated (boiling, simmering repeats) while every Indian recipe I’ve tried cooks it much faster
@RonBhattacharya9 күн бұрын
@: No way! Accept things when they are plain wrong - doesn’t matter your ‘mommy dear’ does so or else. If you’re not adding your whole spices first (before the onions) - just add dried red chilli and a bay leaf and ‘skip’ on the rest. Cuz it doesn’t matter. Use roasted & ground powders of the same spices later in the cooking instead. It’s plain and simple science.
@elithluxe75689 күн бұрын

It’ll help with the caramelization. That’s how caramelization of onions work in general as you’re browning the sugar in the onion
@RonBhattacharya9 күн бұрын
@@muditrustagi3356: Sugar will only add colour. It won’t quicken the caramelisation of onion. For that, add some salt. Also, a little sugar is added while sautéing the spices as that helps ‘enhance’ the flavours.

I so wanted you guys to try different dishes than the most commonly popularized one. But here are some of the Indian Dishes you gotta try. (I'm not writing the preparation method since there are a lot bunch of it online. ) Gajar ka halwa : a desert made of carrot. Yogurt Rice: it's a simple dahi/Yogurt smoked with Spices with steamed Rice. This mainly comes from souther part of India. Roti : similar to naan but it's a flat bread and is eaten on daily basis with sabji(veggies) or dal(lentils) instead of Naan which is eaten only on special occasion or very occasionally . Different types of Sabji : basicall it's like cooked veggies or rather sometimes people also call raw Vegetables as Sabji. I hope it's somewhat understandable 😅. Types of sabji: 1) gobhi ki sabji : "gobhi " is cabbage . So it's cabbage sabji 2)Palag ki sabji : "palag" is Spinach. So Spinach sabji 3) bhindi ki sabji: "bhindi" is okhra. So it's basically Okhra sabji. These are some of the food combo which we eat as a Thali at home on regular basis to avoide the indigestion that most foreigner get because they only eat the foods which is eaten mostly for special occasion or if you crave for it or something like that but not on daily basis. Try searching for homemade style veg thali or non veg thali . You will know what i mean.
