I MAYBE know how you can trap the dragon. idk if it would work but its worth a try maybe..... what if you push the dragon to a certain place (diagonal of the middle piece of the end) so when you unfreeze the dragon, it will fly to the middle of the end and fly over/trough the place where you want to build the cage. When he is in the place where you want to build the cage, you relog so you freeze the dragon, and than its frozen right where you want to have him. and than you can build the cage around him (evryone like so SB737 sees this comment)

The end hub is truly an amazing build it really looks incredible! Not sure if this is just a bedrock thing or if I get super lucky, but i tend to find loads of emerald ore on top of high mountains in the savanna biomes. Usually outside the mountain there will be a ton of calcite, iron, and emeralds. Also, for the ender dragons, is it possible for you to force them to spawn inside the cages and then freeze them before they break out?

If you build a machine to slow down ticks you can move it without the dragon moving however you cannot stop the machine after that so it might take a while
