It's like the whole foods version of Tator tot casserole! It is so good!!!!! I make it similar minus the bacon, going to have to try it your way with the bacon!!! Yum! I cook a lot too, but always open minded about ingredients! Thanks for the suggestion!

Try adding some sliced mushrooms to it. Other than mushrooms, this is almost identical to my own dish.

Do you cook your mushrooms first before adding to the casserole so it doesn’t release too much liquid into the casserole?

If I use fresh, then yes. I have also used the dried mushrooms. I just add them straight in with rehydrating them first. I have even used canned mushrooms when I'm out of dried or fresh.

Sounds good but the meat looks grey not brown.. Try sauntering onions first set aside turn heat tomedium/high and add the meat and let the heat generate the maillard effect ie meat gets deep browning. Add some tomato paste cook for a minute or 2 then add sauteed onions in then the garlic. You will be astounded how much more depth and flavor you will get!!

My mom was raised dirt poor on a farm back in the first half of the 20th century so when she married my dad and had us kids, she knew how to stretch a dollar and fill our tummies.
