It’s called Masterclass because the instructors are all “masters” in their field not that you can master what they have taken years to do in a few videos. 🤦‍♂️

I agree she doesn’t realise that the way she’s doing it now is way more healthy even with the butter etc. What I find is its just the lack of cooking skills people have. I mean how can you get your mind blown by cooking chicken......like how are you not cooking chicken.

@ Exactly. Butter and unrefined Oils are definitely not "unhealthy". That's old news. Saying that chicken breast with vegetables is an "unhealthy dish" because it has butter and salt in it, is... Is just absolute bonkus

As someone who is really into cooking, I've always wondered exactly what they go over in the food masterclasses. In the various recipes and intro did they talk about things like how salt is the most important seasoning or how to use the Maillard reaction (browning) to build flavor (like in the chicken supreme method)? When cooking is boiled down to its basic components a lot of great food is simple things like: 1. Using the appropriate amount of salt to bring out the flavor of the ingredients (more than most people think) 2. Use high-quality ingredients when possible 3. Cook proteins to the right internal temperature (use a thermometer) 4. Develop flavors through browning, caramelizing, and emulsifying (depending on the dish preparation) Based on your review, it seems like skipping masterclass and starting with youtube or cookbooks that give you some of the why behind cooking techniques. Some of my favorites books for learning have been Salt, Fat, Acid, Heat by Samin Nosrat and the Food Lab by Kenji Lopez.

Yeah, it seems like a lot of these classes are just tutorials for a specific recipe. I think teaching the fundamental, transferable skills of cooking would be a lot more helpful

There really isn’t a lot of salt in these foods and it’s a whole lot less than processed and fast food stuff. Also you can use unsalted butter tho if you’re really worried about it🤷🏾‍♀️

Yes that is correct if anyone has ever watched any of his shows especially Hell's Kitchen he uses unsalted butter in his restaurants because they have to do the salt flavoring themselves in order to control the final taste of the food

@@arnekim1922 not really, whenever I make steak or chicken I always use unsalted butter just because sometimes regular butter adds to much salt to my food because I already put the amount I want on it so idk it’s just personal preference but I think unsalted butter is the best

1st: the large knife doesn't seem to be sharp enough, can be seen at the shallot cutting, it hurts to watch using that. 2nd: PLEASE at least scratch that mega-burned layer from the toast so it doesn't seem like you've never been in the kitchen before... 3rd: either if those are chicken breasts or thights fillet, always start skin side down (or any other meat too), I think Chef Ramsay only mentioned it 3 times if not more.. Just a couple things I noticed and was a little bit weird.

I agree that she definitely would have benefited from a better and sharper knife; and the burnt toast was a bit scary. That said, I'm very glad she was honest about her level of cooking. I was kinda expecting her food to look amazing due to having multiple tries before rolling the camera, so seeing the finished product not looking perfect got me to respect her for being honest with her viewers.

Her knife grip is also way too far back which is also why she's having such a tough time with the shallots. It can also lead to the blade slipping and accidents. You should have your hand much further up and have the thumb and index finger stabilizing the blade.

You charred the bread. I can't see that tasting good lol. Edit: Side Note, it may seem like a lot of salt and butter but that's very typically in all professional cooking. It's also not a lot compared to processed foods. Each to their own though. As for people using it. People typically choose courses that they're passionate about, not typically just on a whim. I've personally gone through different courses multiple times to really try to get better. That's me though lol.

Yeah. Salt is not good in huge amounts and also the cheapest processed salt is garbage for your health. I'm not gonna comment on the butter because people that say butter is bad because all fats are bad should do some jailtime.

@@marsin23 gotta look up the type of butter u buy, theres a golden churn butter brand is pretty healthy in small doses like maybe a spoonful? At least from wat i know butter seared salmon is better than processed oil like sunflower oil. But both has a distinctive taste to it, all in all quantity is everything. Follow a meal plan and weigh your intake. Otherwise i say shes pretty informative but not someone i'd take health advice from lmao frozen food

A chef told me years ago the difference between chefs and home cooks was that chefs use much more salt and butter and that’s why their food tastes so much better.

Not really. I went to culinary arts school myself. Because of money and time not matching up, I have a couple of classes left for my degree, but I have a pretty solid foundation. So there are a few things to consider. First, technique. While home cooks may learn a few techniques, there are a lot of things home cooks have never tried. As a self assessment, I thought I was a pretty good home cook before I went, but I'd never cooked sous vide, I'd never poached an egg, and my knife skills weren't all that great. Before I went to culinary school, I knew how to make a roux already, had made crepes and blintzes. I'd made soups and a couple of the mother sauces and fruit compote. But my skill set was pretty limited nonetheless. What working in a restaurant does is gives you experience. You're cooking recipes over and over and over again. You become more efficient. Those standardized recipes are also tested and tried over and over again. There is a balance to dealing with flavors, of cooking foods that pair well together. Does more salt and butter make things taste better? Absolutely. But there is a lot more knowledge in the mind of the best chefs who think on food in an entirely different way. That said, you don't need to go to culinary school to become a better cook. She's right about youtube having a lot to offer. Check out food wishes with Chef John. Check out Kenji Lopez-Alt, the stuff with Serious Eats, and his award winning "The Food Lab" where he separates fact from fiction when it comes to food science and home cooking. Go through all the stuff with Alton Brown's Good Eats. And if you run across something you haven't done before - well, KZbin has made things all the easier.

Butter and salt are not inherently unhealthy! Both fat and a bit of sodium are necessary parts of our nutrition. These look good (well, maybe with a bit less of a blackened bagel in the first one, lol). Also, I think it might be helpful to take a basic knife skills class; I took one at our local cooking school with my mom when I was in college. I swear, nothing has made as much of a difference in the speed of my cooking; plus, it's much safer! Glad to hear a review of this because I keep thinking of getting it!

Gordons raspberry soufflé is incredible. Totally worth the effort plus the coulis is something you’ll use everywhere. BUT you need the high dollar mixer to fluff the egg whites- one of toughest thing I’ve ever tried in the kitchen

Two of my favorite masterclasses are Neil Degrasse Tyson's on scientific process and communication and Chris Voss's on negotiation. I thought of Chris Voss's masterclass in a previous video where you had his book on negotiation that you said you didnt really connect with. His masterclass has some interesting connections between busieness and the art of negotiation. There are also so many great writing courses that I have been working through to hopefully maybe write some Medium stories myself as well. Thanks for sharing your thoughts. You are appreciated, David

i understand everyone starts somewhere, but this is what i truly hate about people my age and all the friends i hang out with. they have 0 culinary skills and just eat out at dine in restaurants all the time and complain about not having any money.. i really shouldnt care this much lol.

Nadder Al-Habsi I’m 22 and by no means a master chef, but I can make something healthy and decently impressive out of most ingredients. Never thought I was exceptional until I went to university with a guy who legitimately didn’t know how to use a can opener because he only ate Tim Hortons and takeout.

if you want to get into cooking with something more beginner-friendly, bon appetit has a website called basically that i really like!! the recipes go step-by-step with little video clips and usually don't have a ton of weird ingredients

looks like expensive groceries cuz the quantity. i just started getting into cooking myself and found buying the smallest cheapest typical spices is sufficient. having to buy a big bottle of smoked paprika or something vs a small bottle helps a lot. and you usually don't use too much of it per dish. hopefully you have a boyfriend or something to share with since it looks like you'll have a lot of food. P.S. i'm single and in LA if you need me to help you finish off that food before it goes bad. i'm an engineer with a full time job, i like dogs

There is a lot of contradictory information on salt out there. Personally, if you don't have blood pressure problems and don't go stupid with it, don't worry about it. Also, butter is a fat and, as we are learning more and more, processed carbs are way worse for you than fats. Enjoy your recipes with confidence! ✌️👍

Shelby, thank you so very much for doing this video. The unlimited for a year is actually a very good deal for those of us who are REALLY into cooking. As to your mentioning about the salt and butter and your health concerns remember you can always cut back on ingredients, never use salted butter at home at all ( you can always add salt but you can't remove salt from the butter) and Gordon does promote healthy foods but let's face it, occasionally we all like to eat decadent meals the are just freaking awesome regardless of the health choices. 😁 So again this was really great, thank you. 🌞

The masterclass videos are in themselves extremely good; however, what many people taking some courses overlook, is that the videos are geared towards individuals who already have skill in the kitchen. One of the problems in many cooking courses, is that if you enter the course and you do not have the skills to keep up with with the presentation and instructions that the professor is attempting to teach you at a particular rate, you may be asked to leave the course and you will not get your money back. So before someone partakes in these masterclasses, you should make certain that you have the rudimentary and basic skills to follow, and execute what is being asked of you, otherwise you may not get any enjoyment from the courses and instead have to trudge through the presentations. Many people will just simply leave the courses and never return to the lesson, after they paid.

I started cooking due to quarantine and I’m inventing my own foods not on purpose 😂 So I’m thinking about getting truffle salts because it can make everything better. But it’s really expensive 😱

I've watched a bunch of masterclasses and my favorites have been this one and garry kasparov's chess masterclass. Kasparov's because it brought me from an 800 elo to around 1,300 and this one because i just think learning to cook is something every single person on the planet should learn.

If a beginner is serious about learning how to cook - and I really doubt that most will be after the restaurants reopen, you would be better off picking up a copy of Betty Crocker's Picture Cookbook for $20 on Amazon. You will find a lot fewer odd ingredients like truffles and mussels that add considerably to your food bill.

Oh can you try and share another class? Maybe something closer to what you like or do (photography, maybe writing, etc)? Also, a tip for the burnt bread: take a knife and scrape off the black parts. It will at least minimize the burnt flavor.

Get a pressure cooker like insta pot. Do video on making your own bone broth. Chicken would probably be easiest. Or other healthy meals with it. Also it is really good for you health wise. Insta-pots are fantastic. Less mess to clean up & can have food for several days. Most time you spend will be on food prep work. (chopping & cutting ingredients). Look forward to that video.

It's more healthy than the frozen stuff you are eating. Butter and salt are not bad for you in moderation. Home cooking is so much healthier for you because it's fresh. Nutrients still in the dish.

There are still some things better taught in person. Like knife handling and cutting skills. If you take even a casual cooking class, the live coaching with the instructor catapults your knife skills.

Still waiting on Hannibal Lecter's Master Class for High Class Serial Killers myself. It's like, for a garrote do you go with a cord, a wire, or a simple rope? What are some proper conditioning exercises one can do to strengthen the muscles for carrying dead bodies? How do you get blood out a tuxedo? Knives or clubs: Which has the better track record? Stuff like that.

Thank you for trying MasterClass. I'm probably on a different skill level in the kitchen, but it helps considering joining it or not. By the way, the amount of salt and fat added is applied to unprocessed food. The convenience food you pulled out of your freezer is already full of fat and tons of salt and sugar. The good about cooking fresh is, you are in charge of what will end up in the meal.

Six months ago I would agree with your statement on butter and salt. After a major shift in my diet and tons of research I believe it to be quite the opposite. A video series on eating quality fats and proteins while limiting carbohydrates to a minimum with test results before and after would be a good watch and should net a ton of views. Watching Fat: A documentary and researching ketogenics has made such an impact on my diet and eating habits that has led to a huge positive in my health metrics.

At least in this video you're holding the knife in a relatively dangerous grip when you're cutting the shallots! Not sure if Gordon goes over how to hold the knife more stably in the knife skills episode but you should have your thumb and index finger stabilizing your grip on the blade itself so it won't slip and cut your other hand while the rest of your hand is on the handle. Your hand is really far back which makes everything less stable and the blade is more likely to slip and cut your other hand.
