This happens if you wash a hot pan too soon before letting it cool slowly. That's why your pancake batter first went to the edge of the pan instead of evenly spreading out

The French Toast Factory in the Yodobashi Building in Akihabara had really good fluffy pancakes. No crazy waits either. Maybe 30-40 minutes when we went at noon. Also "A Happy Pancake" in Shibuya was pretty solid/possibly better?. Went there decently late in the evening and had 0 wait.

The key to make soufflé pancakes is whipping the egg whites to snow. It’s useful if you leave the bowl in the fridge the nigh before as a cold bowl makes it easy (apparently, not fact checked). I think you should try again other day 💪🏼
