This restaurant is probably my number one want to try. I like your review. So many of the reviewers on these types of videos talk too much, but you kept it about the food which was good.

I have nothing but respect for restaurants who put good food first, above any kind of artistic statement or fancy frills. Those are all well and good, yet it seems too many “fine dining” restaurants focus too heavily on the latter points and heavily neglect the former.

in some places a steak of that portion alone would cost 300 euro. Insane value to get that amazing piece almost as an afterthought to a life changing meal, no wonder it's so hard to get a reservation.

Which place for instance? 300 seems far too much to me, even for a steak this big.

I think Japanese restaurants that don't serve foreigners and/or only allow people the chef knows to dine there would be considered more exclusive. Wolvesmouth in Los Angeles has a similarly opaque "reservation" system, but worse, because they're more like a pop-up in that they spend more time on hiatus, or doing private events, than cooking for the public.

Not usually a fan of these fancy michelin star restraunts. I usually think the courses are pretty gimmicky. Even though I think this is still kind of similar. The steak would make it worth it to me.

So, let me get this straight. The no 3 restaurant in the world has one Michelin star. I know taste etc is subjective. But that is quite a discrepancy. Or, all rankings are just bullshit. I’m leaning towards the latter.

Yeahhh, even if the ingredients are as fresh as can be... I'm not going to pay for stuff I could literally make at home easily (grilled prawns, egg yolk with truffle, nice steak). If I'm gonna splurge on a fine dining experience you'd better give me finesse and artistry up the wazoo, NOT this. I get the philosophy, but no way it'd be worth the price (and the trip!) For me.

plus mega low effort essentially no seasoning just fire it up and local\ fresh this and that blah blah blah,....which while nice in a sense and to a degree ,at that point it's basically just them saying how little outsourcing for a variety of produce they can get....and ffs let's be serious for a second, that's the old country, look at it....even in spain,THAT'S where you set up a fancy restaurant ? bad call unless the only goal was pretentious and hard to get to. literally only positive i can give it is their surprise that literally all places like this should be obliged to have as a free checked option, some half chicken or full steak etc,a major serving of protein and calories, ffs they say it's soooo filling....you ever eat as they do? try to have similar sized bites and amount of food? i have..not perfectly duh but still, never even close to satisfied... besides me personally, I'm super picky with food, some stuff i wouldn't touch...on every fancy menu I've ever seen.
