You know, I haven't noticed it being too hot but I also use large roasters that get extremely hot on the outside so I may be a bit biased because of that.

Can you alter the temperatures easily? Like if I have a recipe where I have to turn the temperature down to low and maybe have to turn it back up to high

Yes. You just push stop then put it to the other setting or temp you want. I've flipped back and forth from saute to slow cook on high to saute before as well so it works between functions as well as between temps.

I'll stick to the stovetop and turn the gas up and down. It's a lot easier than what you're doing.
