One of the key tricks to high quality texas bbq brisket is the long overnight hold. For those of us at home, that means waking up to the smell of bbq brisket in the morning, not something everyone enjoys.
In this video I tried to rest my brisket overnight on my Yoder at 150F.

The last few briskets that I did on my pellet smoker (GMG) I pulled the brisket, let it rest for an hour or two on the kitchen counter until it dropped to 160, then fired the smoker back up to its minimum 150. I stuck the brisket back on and let it hold until it was time to serve and it was perfect. On days when I knew I only had a few hours (maybe 3) to rest I did finish cooking the brisket (203-ish) before pulling to let it rest on the counter. For the ones where I had 12 hours or more, I pulled at 190 or so. It's been perfect! The first time I ever tried doing this, I pulled at 203, didn't let it rest on the counter for too long, and then held for 8 hours. It was for sure overdone which is why I adjusted to the method above. Cheers! #yodersmokers #overnightrest

Yeah stopping the cook is def helpful. I can rest in my oven at 155 but want to see if I can program an entire cook on the Yoder and not touch it outside of wrapping it. We will see if I can figure it out. 🍻

I'm with you on the Fat bit. I'm a burnt ends guy! I cook brisquet mainly for my family, they all love it. Your bark is amazing for a pellet grill and it looks really juicy.

Awesome video. Looked like a tough brisket to cook from the gittyup. I have done the same thing by cooking too long and not resting to stop the cooking process before holding. My traegar will not go low enough to hold. I use my oven which only goes down to 170. I monitor the Meater + and turn oven on and off to hold between 140-150 for 6-10 hours. The last brisket I did was absolutely perfect with that method. Keep up the great videos. #yodersmokers #overnightrest

I tried the, eat more vegans/ Black's BBQ double smoke on one of two briskets for the 4th this year. However, with that said, I ran the #yodersmokers for 2 days straight and cooked several other things in the days leading up to the holiday. I had the same thought, I'd use the yoder for the #overnightrest . I brought everything in the house to rest down to 150° before going back on the #yodersmokers for the long #overnightrest. And that's when I realized the yoder had went out. I did not use due diligence in cleaning my #yodersmokers ys640s before the final cook. Again I didn't clean the yoder for several cooks leading up to the cook and I'm sure that's what led to the burnout. Thanks again for the great content and keep up the good work.

Wasn't a huge issue. After dumping the fire pot it lit right up.Just food for thought. And I kinda secretly wanted to know how long I could let it go without cleaning. Thanks again. C.

I like the foil boat method with my #overnightrest on my #yodersmokers but I do have to say that looks pretty dang good sir! I may have to give that a try but at a lower temp like you said. Thanks for allowing us to learn from your mistake.

No prob! You can rest at 170 as well. Just let cool to 160 before putting in oven overnight. 🍻

Had one the other day finish too late and had to hold overnight. Wasn’t planning or setup for it and had to use the Yoder or Oven. Opted for Yoder. I pulled at 203 and rested at room temp for 1 hour to stop cooking process then put back in the Yoder after cooled to 150-160. Turned out pretty good that way.

Love the Content I don’t have a #yodersmoker. I use my lone star offset, and cook it till it’s about 190 internal. I went and got a small warmer and let it #overnightrest ,and they been the best I ever made. Keep them coming 🇺🇸🥃

I suppose you'll get there by error and trial. Besides figuring out the programming, it could help laying aluminum foil over the Yoder in order to reflect away the sun rays.

This was an interesting test. To be honest. I would love you to make some adjustments and try this again. I like the fact that this one didn’t work out really good. Great learning moment. Perfect opportunity to dial it in. We would all like that option of true set it and forget for those times we want a brisket, but just not up to the all nighter. Great video !!! I have a YS 640 also, the reason it wouldn’t go down to resting temp is because the ashtray is full or just not venting good due to ash blocking the holes. I love my Yoder but could definitely use a couple minor improvements.

Thanks. I’m not sure, I don’t clean it every cook. I don’t think it was a large amount though since the long hold is so low and a very small fire would be burning. 🍻

Another great video with a brisket to #overnightrest on your #yodersmokers. A lot of learning going for sure and we appreciate the effort. I haven't tried anything like that but my stove goes down 100 so setting it at 150 to rest for 3-4 hours seems to work well. Hope you are keeping a journal of all this effort to go into a book/website later, thx again! If you get a chance to cook on or with a Lone Star Grillz pellet cooker take the opportunity, certainly doesn't need a smoke tube and I would like to hear your opinion.

I really like shredded brisket sandwiches. You just did a shredded roast on your Komadojoe instead of on the #yodersmokers . Granted, with that one you did not do an #overnightrest. Maybe this would work better for you in the winter months when it does not hit 90 degrees or perhaps a cloudy day.

Interesting that you had that issue with holding temp when the sun came out. Just before I got my #Yodersmoker I had a Recteq and was doing an overnight pork butt. I looked at the temps in the early morning, after the sun came up and I noticed something interesting. The temps were just dropping. I went to investigate and the fire was completely out. My guess is that the sun came out and it couldn't hold the low temp I had it set to and didn't feed pellets long enough that it just went out. I'm sure it's only an issue with very low temp settings but something to be aware of. I love how little you had to do with this #overnightrest brisket and it looks great. Let us know how it turns out next time with the lower temp to start the hold.

A good heavy #yodersmokers can hold that #overnight I guess. Just gotta get the timing right and provide some shade perhaps. Good to know :).

You can rest at 170. Just rest it first to 160 so it stops cooking. 🍻

If you are going to rest overnight either pull at 190 and rest at 150-170 or cook until done, let cool down to 160 and then rest 🤣
