My first meal in the Philippines was Pork Sisig at the Mesa Grille at the MOA Mall. OMG, when it came out on the hot plate sizzling with that egg and red chili along with a San Miguel, that stuff tasted so good. Years later and after having many type of sisig, I was told what part of the pig the meat was from and I had the same reaction as you did, UGHHHHHH! However, still love me some sisig! In Pampanga, where the Sisig originated. They cook the sisig differently. It became popular in the country, but every island have their own recipe. The only things similar are the part of the meat, chili peppers, and fresh egg. The other ingredients could be different.
