I marinate mine with Worcestershire sauce. Depending on the thickness I may do the salt brine. Cow Cover and pepper. Amazing!

Tried the comp steak method today. Now I'm usually a salt and pepper and that's it guy. I can't stand the "season salt" flavor on a lot of these steaks on youtube. But this from the mop to the Cow Cover/Tex Beef/Dirty B Hot all the way to the Reserve sprinkled on at the end. It's like 10 notches up. The eye to the cap tender and glazed with spices. One thing I have learned... competition grilling is not representative of the best grilling. It’s always run by suppliers like Kingsford, who pick judges with known, prescribed, tests that lean towards particular styles to make their products look good... hence, the BIG checks. After actually tasting winning results over losing results. After having my friends do their own taste tests... competitions suck. Pure and simple. I now go by the line of people waiting to buy from of a place that lives by their sales. Ever notice how many competition winners run grills/restaurants with weak sales? They don’t actually run restaurants with lines out the door. Franklins BBQ 🍖 here in Austin got no respect forever. Endless lines forced respect ✊ but it’s not the norm. FYI... not disrespecting your cooking. Looks tasty... just trying to share my experience. Taste it yourself, judge for yourself.

"Competition BBQ" or "Competition Grilling" is a joke for the most part. It's cool for the fun and games but there is a big reason the best chefs in the world aren't wasting their time in these contests. Not disrespecting this dude at all, he is a stud on the grill, no doubt. But the judging is super subjective and not indicative of how successful a team of cooks could be opening a restaurant when maybe three people are judging the food, all with preconceived notions.

This is not a recipe, it is an actual sales pitch. I am fairly certain that is why people are disliking the video. So to cook this recipe, you need over $60 in spices, but for a back yard steak, you only need $20 in seasonings from him.

I came here for a "recipe" and not $50 worth of prepackaged product, which doesn't even include the "recipe". I want to be able to make my own marinade and spice rubs... this doesn't even lend me inspiration. He made $10,000 on a winning steak, and eventually became a millionaire on his "how to" videos and line of sauces and spices. This is the same as a "free conference" where you can learn to sell houses, without using your own money. All you have to do is "buy my book." That guy may have made his initial money, buying and selling houses... but now, he is getting rich on selling books... and, the book probably won't actually help. I like to watch cooking content on KZbin... but, not for the slow motion close-up images of medium rare steaks... I want recipes, so I can compare them with my own, try them out, and identify what I can change to improve on mine without just ripping off the other guy. On this guy's channel, the answers that I came for are hidden behind a pay-wall and don't even come with the answers. This is called "dishonest" self-advertisement.

Hey, Kosmo's? I LOVE your channel! I did your chicken thigh recipe the other day and they got gone so fast that the next day my 8 year old granddaughter LITERALLY cried the next day because we didn't have leftovers. My daughter made her some chicken and she said "This is nowhere near as good as Pappaws." I used your salt brine technique on a Porterhouse and thick cut Sirloin last week. I should have went a little longer with the brine on the porterhouse but it was still the best porterhouse I've ever made and my girlfriend said it was the best steak she's had in years. Today, I used the salt brine method on a couple of well marbled, thick cut Boneless Ribeyes. I then rubbed them generously with Garlicc Powder & Parsley as well as Szeged Steak Rub, patted on some robust extra Virginia olive oil and put them in the fridge. Going to fire this Char Broil gas grill up to about 600 degrees and go 3 and 3 for the marks then flip and do the same on the other side. I'll post a picture if they turn out if you like. Thank you, sir. Grill on!

Typically the turn in time at a steak competition (SCA Competitions) is a really tight window, usually about 15 minutes from start to finish. You can obviously have your coals hot etc before this time starts but there isn't a lot of time to reverse sear when every second counts. That's the reason for the hot and fast approach in this particular video. When I'm cooking at home or when I have more time to tinker I definitely enjoy the process of the reverse sear and really driving in smoke flavor! Hope that helps!

What gate are you using there? I see it looks like it's sitting on top of the weber grate. Them grill marks are awesome! Also just bought the stuff to make these steaks.

Got me a golden ticket earlier this year using this recipe, just slightly modified. Used a light coating of soy sauce for a marinade and then worchestershire as a binder before applying seasonings. Love the Kosmo products.

Couple questions. First do you regulate and monitor your grill temps or do you monitor your steak temps and go off that to get your preferred doneness
