Awesome video! I have two kinda dumb questions here. Do you temp check the oil before putting the fillets in or is the method of sprinkling water and seeing it sizzle usually hot enough? Never really pan fried before. Also, after filleting, do you have to clean the fillets before putting the batter on it or did you go straight to the batter and cook it? THanks!!
