Hi, Andrea! This ice cream sandwich cake looks awesome! I have made something like this before with different flavors of ice cream sandwiches, and it was great. I like the topping of crushed candy bars, caramel, and Magic shell. I like that you lifted it out of the pan so we could see it in its entirety. Thanks for sharing!

Only way I could make this 1 is to make my own ice cream sandwiches , from a gluten free cake. Or brownie and then layer it and then use gluten free candies on top or I cant have it .Cos they dont make gluten free ice cream bars . I have looked in several grocery stores .And have found none .

There are a couple of gluten free ice cream sandwiches that I know of called GoodPop and Rebel. They are sold at Walmart and Kroger. I think FatBoy may also sell one too. I'm sure your homemade version would be much better anyway. Thanks so much for watching, Ruby! ~Andrea

The Wal-Mart where I live is really small and they dont carry any .And neither do the other stores where I live . So making it myself is easier . Urs looks really good but I cant have peanuts due to allergies .So would have to sub in almond butter cups and something else
