Go up 4 times, then go left as much as possible (which is twice). Then make level near rock is win. As this should put the level next to a rock map wise.

Re "No Way Back" - assuming there isn't rules spaghetti faking the RNG, apple is defeat (3/4)^3 = 42.1875% of the time. The odds of dodging that seven times in a row to safely cross the fruit are (1 - 42.1875%)^7 = ~2.1585%. That's low enough to be hella annoying to reset for, but not low enough to be infeasible.
