🍰 dough:
3 egg yolks
a pinch of salt
80 g (6 tablespoons / 2.8 OZ) powdered sugar
80 g (1 stick) melted butter
1 teaspoon vanilla
200 g flour
1 teaspoon Baking powder
Place 1/3 of the dough in the fridge
Baking pan 20 cm
🍎 filling:
3 apples, cut into cubes
40 g (2.5 tablespoons / 2.4 ounces) sugar
5 g (0.5 tablespoons) corn starch
Juice of 1 lemon
Heat in the pan to caramelize
🧁 cream:
500 g Greek yogurt
50 g (4 tablespoons / 1.7 OZ) corn starch
1 teaspoon vanilla
Mix well
3 protein
a pinch of salt
130 g (0.7 cups / 4.5 ounces) sugar
Beat until the tips are hard, then lift under the yogurt
Assemble the cake as in the video
1/3 of the dough frozen
Bake for 40 minutes in a well -heated oven at 180 C / 350 F or until the top of the cake opens evenly

An ideal yoghurt cake is a wet and delicate cake that gets a light acidity by adding yogurt in the dough. It has a loose and relaxed consistency with a fine crumb and a golden brown crust on the outside. The cake should not be too sweet, but should have a subtle sweetness that is balanced with the spicy taste of the yogurt.
The ideal yoghurt cake should also have a fine taste that complements the taste of the yogurt. Common flavors are vanilla, lemon or orange peel that increase the natural acid of the yogurt and give the cake a pleasant aroma.
The cake should be easy to prepare and do not require any complicated techniques or ingredients. It can be enjoyed pure or with a blob of whipped cream, fresh fruit or a dash of honey.

Pre-heat oven to 180c 2. mix 3 egg yolks, pinch of salt and 80g powder sugar. 3. Mix in 80g melted butter and 1 teaspoon vanilla 4. Sift in 200g flour and 1 teaspoon baking powder, use silicone spatula to mix into a pastry. Cut off 1/3 and place in freezer. 5. Peel and cube 3 apples, mixing in juice of 1 lemon and 40g sugar and 5g corn starch 6. Add apples to pan to caramelised light gold. 7. Line 20cm baking pan/tin with the pastry, covering the bottom and almost to top - leaving around a cm 8. Add apples and level out 9. To a large bowl add 500 g Greek yogurt, 1 teaspoon vanilla and 50g corn starch - mix well 10. In a separate bowl add 3 egg whites and pinch of salt - beat until foamy, then gradually add 130g sugar until stiff peaks 11. Add the eggs a 1/4 at a time to the yogurt - folding as you go] 12. Place meringue mix on top of apples 13. Grate the 1/3 frozen dough on top of the meringue to cover the top 14. Bake at 180c for 40 mins 15. Top and pastry should be dark golden 16. Sift powdered sugar over
