I think the reason it did that is because of physics. When you fill a bottle on the ground and seal it, the pressure inside the bottle will stay at the standard air pressure. When you take a plane, they go (now correct me if I'm wrong) very high into the air. As you rise in elevation, air pressure decreases, but the pressure in your bottle remains what it was when you filled it, if it's properly sealed. When you open the bottle, the pressure inside the water bottle wants to stabilize to the surrounding pressure, thus forcing out the contents of the bottle, causing it to act like your mom on a Tuesday night. This is just a short explanation, I'm skipping over a lot, I highly suggest you look into pressure and how it effects things.

For those confused by the water bottle, that's caused by the change in air pressure from the airplane reaching cruising altitude. It's the reason why you normally can't take a full or unopened water bottle on a plane, as the pressure builds up and can sometimes make a mess. I think in that person's case, they filled it after getting through customs, so it was full when the plane reached cruising altitude.
