How about other shipping options like UPS? Do you recommend?

I exclusively send things in padded envelopes which use Lettermail and Canada-Post are the only ones in Canada who are allowed to send regular lettermails at the Lettermail rate. It costs between 1.15$ and about 4$ to send these letters with Canada-Post but would cost 20$+ with other companies like UPS, Fedex, etc. So if you only send lettermails, Canada Post is the only viable option. As for parcels, these other companies can offer competitive prices. Also, there are other smaller companies like stallionexpress, chitchat, etc, that can offer very competitive prices for parcels, but I'm not familiar with those since I never ship parcels. But what I know is that these companies don't offer their services everywhere like Canada-Post does so you might not have access to them depending on your location.

I was just about to start selling on eBay then this strike happened lol. Do you think I should wait until the strike is over or is it possible to use other postal services than Canada Post?There is a Stallion Express drop off spot about 30 minutes away from me, do you think I could use them to ship ?

Yes you could, see their website or contact them for pricing and if the pricings make sense, you can definitely use them :) And if you can't use them, you can still start up your ebay store but put yourself in Vacation Mode (Time Away) until the strike ends, to make sure nobody buys your items before that
