Paul your mention of whiting sucking on a bait reminded me of a lesson my Dad taught me back in the late 60's or early seventies. When the fish were being particularly fussy they sometimes spat the bait up the trace and if that happened, Dad used to leave the bait in it's shell and his catch rate often increased when he did.

You're missing another name for the flathead: they are also known as flatty dogs. They can also grow to 3m, but will only catch them on whole chooks
