I'm a college student who likes to cook, but IKEA knives are the only ones I can afford right now. I bought the IKEA 365+ and I'm so happy with it. Thank you for the video!

The 365+ knives are brilliant. They can take a fair amount of abuse, they are cheap (at least for half decent knives), they can handle the dishwasher perfectly well, they take a keen edge when sharpening, they don’t blunt too easily. It’s a win win to me. My wife hates using my Zwillings, finding them too unwieldy and a little TOO sharp so she’s constantly worried when she uses them. The Ikea knives are light, compact, easy to use and don’t need nannying to get the best out of them. Despite not being “Dishwasher safe”, they go through every through days without damage or rusting. So everyone can enjoy using them. Good video my friend.

For the price, these are excellent knives! I have the set and I have top of the line knives to compare them against. I bought these originally as beater knives, but after using them decided not to use them for that purpose. They performed much better than expected so they get treated just like my more expensive knives as far as care is concerned. No dishwasher, handwash only, dried afterwards and stored in sleeves. I hone them when necessary, but haven't needed to hone much thus far. Haven't sharpened yet as they are still cutting well. Hard to complain about these given the low price point.

Agree! Just get us relatively good steel, good shape, good handle, and it will not cost too much, it will be a good kitchen knife. Anything better and more expensive is for picky pricks.

Have the large chef’s knife and am very happy with it. We cook meals from scratch daily. Use the knife daily. Holds a decent edge and easy to sharpen. No chipping or rolling of the edge. One would have to be a really serious home cook or professional chef to need a better / more expensive knife. Of course want-VS-need are different things.

I have a 365 large chef knife. For what it costs, I find it pretty good and it is not something extremely soft steel. The handle is nice and grippy, not slippery like some full metal knives. I'm thinking of picking up a santoku too for the test. Sure, a handmade japanese knife with aogami 2 steel is from another planet, (at least the ones I have are), but so is the amount of money they cost.

Agree! I personally like Chef's style knives the most, and this one is not bad, OK in my opinion. I prefer thinner blade behind the edge, but that usually cost way more than 25$....
@hoggif
@hoggif 2 жыл бұрын
@@knifeshopping I prefer thin knives too and there is a real difference between a well sharpened ikea cheap Santoku set and a good thin japanese one. Making the blade very thin requires more from manufacturing and type of steel. On the other hand comparing a $25 knife to a $250 knife just makes no sense. Latter is usually better.

Keep up the good work man 👏 Regular people like me (an amateur/home cook) need reviews like this on affordable gear ⚙️ I have some decent knives (Like my Henckels) but I still like to keep some "beaters" (aka work horses) around for the rest of the family to use (wife, grandma, neighbors, etc)...

I bought that utility and 8" chef used off of ebay for like $15 for both. The utility had minor minor tip damage and both were not sharp. Pretty much a typical person would get rid of these. I agree, I like the utility knife. Maybe a bit better than the 5" victorinox. I just don't like how heavy the handles are for both of them.

These are good knives that work well. I restore tools so sharpening often isn't an issue for me. These are decent steel and works well enough that you are not getting too much more from a premium knife. They are VERY easy to resharpen, but tend to be a bit softer and unable to get VERY sharp regardless of your methods. Like the man said, buy the one that fits your hands because it feels good. Tool steel is tool steel, I dont see why production knives should cost 250 dollars - makes no sense from a production point of view. If you can't sharpen your knives, you are probably better off buying a cheaper lot of the same blade and get then sharpened 3 at a time anyhow. Very good primary maintenance-free knives.

I like the design as it is comfortable and looks great. However, it's absolutely pain to sharpen on the stone. There is something off with the steel used.

Can you please elaborate on sharpening issue? I suspect if the hardening is not so good, there will be a lot of burr. I mostly hone my utility knife, I less care for perfect edge on that.

I'm not sure what is it with this one particular IKEA knife. I have also IKEA VG10 and Eden Aus10 knives. They are much easier to make them hair shaving sharp. I use 1200, 3000, and sometimes 8000 grit stones with strop covered in diamond paste (DMT). This particular IKEA knife takes me the most time to sharpen it to my liking. I was also thinking about botched hardening...

These do not look too bad, and probably perform well enough for the not-knife-enthusiast who cooks occasionally. The dimples ("fluting") on the Santoku serve absolutely no purpose, though.

Why not just blunt the heel of the 365+ pairing knife if you're worried about cutting yourself?
@knifeshopping
@knifeshopping 8 ай бұрын
May work. But even then, if your finger goes past that, sharp portion is there... It is design elements and their functions what mostly discuss here, plus some people can do it, maybe even round up that heel on a belt machine or with a file, some will never do it and will use the knife as is. Thank you for the comment/suggestion!

I don't like that the blade of the paring knife is so wide. It's like a scaled down chef's knife. I can't make curved cuts in fruit. The steel is hard and difficult to sharpen. The sharpening angle out of the box is variable. The lack of a bolster allows the knife to slide through food and fit the IKEA Skärande sharpener. The metal handle is great.
@knifeshopping

Thank you for sharing your feedback! Which knife do you use for curved cuts then? Or you are still looking for one?
@j7ndominica051

I have an old Russian knife. That I sharpened, and reformed the tip on a coffee cup. Its dimensions are 1.5×8 cm, almost the same width as the handle. The IKEA knife is 2.5 in the widest. If I try to put my hand over the blade to use the tip, I will likely cut myself. Any modern cheap knife of similar dimensions and pointy tip will do just as well. For example, I might need to cut out apple seeds. How I do it is take a 1/6th cut and remoce the center. Or peel something without getting a peeler. It can't follow the curvature of the round fruit. The tiny chef's knife is ok for cutting small onion and garlic, but I struggle to keep it sharp. If you look at the angle of the 20cm, it is very pointy (the ground down edge is wide). The paring knife has a more blunt angle. A pull through sharpener can only do one angle.

@@knifeshopping that doesnt mean that they are bad knives. The handles actually looks way more comfortable than the Global ones. Thats something that surprises me about the success of the classic Global knives their handles they are so thin much more suited for smaller hands but so many chefs in professional kitchens use them. And these are often guys with big hands they probably bought the knife just for the futuristic look. I dont know that much about the quality control of chinese manufactured knives vs german or japanese I only know that you find bent blades everywhere. Saw your video about shopping Zwilling knives in germany and that there was not a single straight blade. That matches my experiences, Wüsthof is imo a bit better about that. However I still got hooked by Zwillings marketing and im using a 20cm Gourmet series chef knife (I think made in spain not Solingen). It was a little warped and had lots of sharp corners. Straightend it with a hammer on a tree stomp and rounded every sharp edge on back of blade, handle and choil area. Now its a really nice knife very pleasant too use. Light, comfortable and good blade geometrie and not too thick. Handle scale construction is descent qualitywise.
