ইউটিউবে ইলিশের ঝোল রান্না আপনারটাই বেস্ট। আমার আম্মু এভাবে করেন। সবাই দেখি আদা রসুন জিরে দিয়ে একাকার। ইলিশের আসল গন্ধ কিছুই থাকে না এতে।

Hi Selina, it's an excellent Ilish recipe. We always cook Ilish in this way. The taste and aroma of Ilish remain, if not, increase in this way. The Ilish curry becomes very yummy and aromatic if it is cooked in this way. Usually the people of Dhaka and surrounding areas cook Ilish exactly in this way. Where did you learn this recipe?

Thanks for uploading this recipe. I have few instructions for Bengaleees living in abroad and how to thaw & cure Hilsha fish. For Probashi Bengalees : Those who buy frozen Hilsha these instruction is only for them to get good results. I usually get Hilsha fish cut into steak pieces frozen from Deshi stores. I thaw only the pieces I am going to cook. That way they stay fresh in the freezer for a month. After thawing I put in salt water in the refrigerator for an hour. Later I mix half tsp sugar to mellow down saltiness and that will also make fish more moist. I kept it for 12 hours or overnite . Next day I washed the pieces in cold water and get ready for cooking. The fish turn out moist and very soft. Also the salt will neutralize formalin if there is any in the Fish. Many Bangradeshi crook exporters dipped Hilsha fish in formalin to make it more appealing and longer shelf life for preservation. Keep in mind Ingesting formalin is very harmful.
