HOW TO MAKE A GOOD MUSTARD PASTE THAT IS NOT BITTER: - Start by soaking the mustard in water for two hours (at least). - Strain and then grind the mustard in a grinder or on a shil nora along with green chillies and salt. - Depending on the size of your grinder jar, you need to take sufficient quantity of mustard seeds so that it comes up above the blades. Otherwise your paste won't be smooth enough. - Grind patiently until your mustard resembles the consistency of sandalwood paste. The brown mustard skins should look like specks or dots and no bigger. - Taste the paste. If it is not noticeably bitter, congratulations! You have made respectable mustard paste fit for a Bengali dish. The tiny hint of bitterness will go away when we cook the mustard. PS. This is not relevant to this recipe, but sauteing mustard paste in oil DOES NOT turn it bitter. It is a food myth. That only happens if your mustard paste is bitter to begin with.

Moreso because as a non Bengali calcuttan I have learnt so much from Poulomi's impeccable command over the Bengali language and it has tremendously helped me polish my Bangla vocabulary. One of the best item ever ....for east Bengal .... Little diffence from my mother's recipe....maa use sufficient musturd oil and no curds....she keeps all ingredients including fishes in a tiffin box . After the rice get cooked . She brings out some rice from pot and keep that box inside the pot and covered with cooked rice again . Lid the pot properly and kept aside . After 30 to 40 mins take out the box and we find our best recipe ever ....

Spoons and cups have different sizes so it can not be measured perfectly by them

But ingredients differ in mass. One cup of flour will not weigh as much as one cup of rice or one cup of milk. So how does one measure correctly? Especially in baking it has to be very precise. I have gone horribly wrong eye balling and measuring ingredients with cups and spoons. A kitchen scale in indispensable for me now. Its safe, chances of ruining your recipes is less and I even measure raw grains and flours to cook the exact amount of food I want to cook without risking leftovers and wastage.

Am from Mangalore. Not many of us like the hilsa fish. However, I’ve tried this very recipe with sardines and Kingfish( Surmai) and prawns and the curry turns out good.
