The easiest answer is usually the closest to the truth. Technology. It's just a stack of, or maybe one single that he switched out with slight of hand, extremely thin screens. They exist at 0,1mm thickness. The only question is how he gets information to appear on it. I'm guessing the pen he keeps close has ink in it for the signature to not raise suspicion, but also a wireless transmitter. When the guy names George Clooney the magician takes a little time for a backstage help to find a picture and quickly Photoshop it in. It then sends that picture over to the thin display, and you're done. OR it's actual magic. I think both are equally impressive.

He did a similar trick on Penn and Teller: Fool Us, and he let Allison keep the picture, so I doubt it is a flexible LCD screen. Also, if he does this to people's licenses from the audience...idfk. Who knows, maybe he sold his soul to Satan.

You're talking about technology that doesn't even exist. Paper thin bendable LED screens with Ultra HD and no backlight? as well as wireless and a paperthin battery. Maybe in 50 years.

Who said it's ultra HD? And: It does exist though. Look at royole.com where they seem to offer just that. We already have things like e-paper using color. I'm not saying it's cheap or easily obtained, it is probably crazy expensive. OLED technology also doesn't require a backlight AND is extremely thin and foldable: the bottom part of the iPhone X folds down around itself for example. I don't really see any other option. He is obviously stalling while talking with the photo facing down so that someone else can edit the picture. The only way to get ANY picture of ANY famous person on there is by the thing being a screen. It's still groundbreaking technology, I'll give you that, but what other option is there? It's not a slight of hand trick, there is no printer involved, so it's technology.

He's even touching the "pen" to aim it at some point. It's so obvious: the pen is the transmitter for data. The "photo" is just a very thin screen. It's probably an e-paper type. With studio lighting it wouldn't need a backlight. It could be low-resolution, color, and e-paper. That's the simplest explanation.

They're not photos - they're flexible LCD screens. Unsure how he transmits to them though.
