The S and R sound is really similar to the european portuguese. Makes sense that this was the region the portuguese court settled during the napoleonic wars

Was not only european portuguese, because, despite the courts, they colonized the whole Brazil. Difference is that while carioca accent had German (swiss immigration), French (same to german and french occupation) and Russian (early XX century immigration) to make the accent stronger, paulistano accent had Italian and Spanish (late XIX/early XX-century immigration) to soften it.

It is kind of difficult to know for sure how many dialects there are maps that show different things, but by searching it is possible to find a good result, note that in the carioca dialect Words Ending With 'S' Ending With 'X'

I'm curious. If I bought a text book or attended a class to learn "Standard Brazilian Portuguese" which dialect or accent would be the closest one to that? Carioca accent or Sao Paulo accent, or any other widely spoken variant? 🤔

Any one of them. I'd say you'd better choose the Sao Paulo variant. Both dialects are widely understood because of the media. Other dialects with many speakers: Bahia, 15 million speakers. Rio Grande do Sul, 12 million speakers. Minas Gerais, over 20 million speakers. Choose one of those as a starting point, then forget about it. Many people speak a mix of dialects.

If you're learning Chinese, there's a standard Mandarin Chinese pronunciation, but I'm afraid to say that's not a thing in Portuguese. It's the same thing as "standard British accent" or "standard American accent", although there is what they call "General American accent" or "Received Pronunciation". But if you're looking for most common set of sounds, common patterns across the country, maybe there's a thing like that...

But it's really common that foreigners learn those dialects not because they're common and easier, for that matter, but because foreigners come and go live there. It's just a matter of commodity. Here there's a bunch of different accents all of them are equally good to learn, so choose the one you like best, that sounds good and go for it! ^^
