In English a ram is an adult male sheep, a wether is a castrated male, an ewe is a female adult sheep and a lamb is a baby sheep both male and female. Goat however is not classified as mutton, wether it's alive or made into meat, goat is just goat. An adult male goat is a buck, a female goat is a doe or nanny, and a kid is a baby goat. Castrated goat's are also called wethers. Goat meat tends to come in small cuts, because goats tend to have less meat than sheep except for meat breeds. They don't usually cut the goat meat into chops, so if you see a chop it's a chop it's either beef, pork, or lamb. It's only recently that goat meat has become popular in the US, but it's still not common to see it at a market unless it's a specialty store.
