IMPOSSIBLE BUTTERMILK PIE WITH BUTTERMILK WHIPPED CREAM

Impossible Buttermilk Pie with Buttermilk Whipped Cream
1-1/2 cups Sugar
1 cup Buttermilk
1/2 cup Homemade Baking Mix or Bisquick
1/3 cup Butter, melted (I browned my butter)
1 teaspoon Vanilla Extract
3 Eggs
1/4 teaspoon Lemon Zest and juice of half the Lemon
Preheat oven to 350 degrees F. Grease a 9-inch pie plate. Mix all the above ingredients for 1 minutes with a handheld mixer in a large bowl. Pour into the greased pie plate and bake for 30 minutes or until a knife inserted into the middle comes out clean. Let cool and enjoy with the following Buttermilk Whipped Cream:
3/4 cup COLD Heavy Whipping Cream
1/4 cup COLD Buttermilk
1/4 cup Confectioner's Sugar (powdered sugar)
In a large bowl beat with a hand mixer the heavy cream and buttermilk until soft peaks form. Add the sugar and mix until incorporated and soft peaks are formed. Do not overmix or it will become butter.

Looks delicious! My mom (I've made a few times)makes a buttermilk pie from a recipe book of "old receipts " from Ozark pioneers from late 1800s to early 1900s. It is awesome & it is in a shell. I do a lot of the "bisquick"(but I too make my own mix) "impossible " savory pies. They are kind of like a quiche without the crust. Also great to do this time of year with all the zucchini & tomatoes we have growing!

I can’t remember when I first had Buttermilk Pie, but I love it. Love 💕 it! I love anything with custard. I have never made one so I hadn’t thought about it making it’s own crust. Mama’s best friend used to make her Pumpkin Pies 🥧 like this. Made their own crust and were very good. I’ve never made a pie crust except the graham cracker kind. 🤪 I pray you are all well and that the kids have a wonderful school year. Covid-19 is rearing it’s ugly head here again. 😡 It has cooled off here a lot too. Down to the low to mid 80’s. That’s much better. Louisiana heat is killer!! I remember how many times it flooded when I lived there. Has it rained yet? Makes it hard on the farmer! Probably just as well you didn’t plant a garden. I’m eating salads now. And still cottage cheese. I like it in my salads as well as beets. My neighbor brought me her leftovers last evening…3 little barbecue ribs , half a baked 🥔 and a salad. It came from FATZ and was good but girl, did those little bit of ribs make me sick. 🤢. I really need to go see a gastroenterologist. The food isn’t the problem, it’s me. Have had a rough couple of weeks. One thing after the other. That’s why I enjoyed your Jefferson trip videos so much. I laughed my head off at those funny photos! You can make a buttermilk substitute by using whole milk and putting g a couple of teaspoons of lemon juice or apple cider vinegar in. Mix and let it stand for about 10 mins.
