"Pick up some stone...for his kidneys." ?? 😂 - I find the farms get difficult to hire enough laborers if the farm building itself is too far away from the bulk of the housing - they will only travel so far to work. The fields can be farther away, but the building that hires them (farm) needs to be within a certain distance, so be aware of possible problems out on the outskirts of town until you grow out toward them. - Growing buckwheat works well for chickens, unlike wheat which is used for a lot more supply chains. Later, growing potatoes works well for pigs. - The animal workers don't need to be employed except to restock feed/water, so if feed/water is present the animals will be fine even without a worker. On the other hand, more sheep/cowshed workers equals more milk and more grass mowed into hay. So they are not required but are very beneficial. Good show!

When you have a farm manager, you can select your wheat, sunflower and flax as 3 small fields (less workers/laborers required) and rotate them every year with fallow for cows. 3, 6 or 9 fields. I would also recommend making couple of houses wit larger gardens. Usually 3-5 of them will feed the whole village in early days. Also for fishery - tell them to do dried fish only - they do not rot. And apples for orchard - same story - they will be fine for more than a year. Great series. A lot of inspiration for me. Keep it up.
