Safety violation at 5:00 DO NOT reach over a coupler to operate an angle cock on the opposite side. Cross over the end of the car and operate the angle cock from the same side of a car.

For anyone else who's wondering, the unusual-looking cars at 2:00 are for carrying railroad ties. Each bay holds a stack of ties aligned along the long axis of the car, so the ends are held in by the bulkheads, as shown at 11:18. Never knew such a thing existed.

At 5:50, shouldn’t the couple be made first prior to connecting hoses to prevent pinching/crushing etc?

One job I had was to take skrap metal to a steel mill. One day a yard hand got in the couple. The scare house down played it. Said he cracked a hip
