In my family, it was always Mom who would start the opalki. (Maybe because she was Polish, and Dad wasn't) As each person breaks off a piece, she makes a wish for them for the coming year.

What is the recipe for the bread

Plain wheat flour and water. Nothing more. Pressed flat and baked. As far as I know, because nobody actually bakes it at home. Opłatek for sharing at Christmas Eve is distributed before Christmas by local monaseries or churches. The same bread but in form of little circles is sacramential bread for masses in roman catholic Church.
